Friend or Enemy?
It’s a really big problem. I Get asked about it All. The. Time.
How long does an unfinished bottle of wine last before it starts to get “funky”?
After I looked up the definition of “unfinished bottle”, I understood the question.
In all seriousness, one of the many ways that wine can be confusing and downright manic, is when it comes to Oxygen. I call it wine’s “FRENEMY”. When we are making it and trying to savor it’s enjoyment… Oxygen is a bad thing and we do everything we can to protect the wine from it.
Yet when it comes time to enjoy it, we are aerating, decanting, swirling… which are all things created to introduce MORE oxygen into the wine- because very simply, it smells, tastes and FEELS better in our mouth as it “opens up” and interacts with more Oxygen.
Have you ever been in a restaurant or at a friend's house and they think they are doing you a favor by filling your glass to within a millimeter of the rim? While I appreciate the gesture, the wine dork in me stresses because how in the world will I SWIRL IT????? (Sadly, in the instances when this has happened, the wine quality wasn’t one I really wanted to savor anyway…not enough oxygen in the atmosphere to help some of those….)
